What are eggs used for in these dishes..?

i'm doing 10% of my food technology gcse grade tomorrow and we have to make two dishes that show the versitility of eggs. I'm making Spaghetti carbonara and custard tarts. We have to know what the eggs job is in these dishes but i dont know?? example: eggs are in meringues to trap air... thanks. x
